  • 3 cups bread flour
  • ⅓ cup granulated sugar
  • ¾ tsp salt
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 6 tbsp unsalted butter (softened)
  • 2 large apples (peeled and diced)
  • 2 tbsp unsalted butter
  • ¼ cup brown sugar
  • 1¾ tsp cinnamon
  • ⅛ tsp allspice
  • ⅛ tsp nutmeg
  • 8 oz. cream cheese (room temperature)
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (melted)
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ cup all-purpose flour

Instructions

  1. In a bowl, mix warm milk, yeast, and sugar; let it froth.
  2. Combine bread flour, sugar, and salt in a mixer bowl; add egg yolks, vanilla, butter, and the yeast mixture. Mix until combined and knead for 8-10 minutes.
  3. Let the dough rise in a greased bowl until doubled (1-1.5 hours).
  4. Prepare the apple filling by cooking diced apples with butter and spices until softened.
  5. Beat cream cheese with sugar and vanilla for the filling.
  6. Roll out the dough, cut into squares, fill with apple and cream cheese mixtures, then shape into buns.
  7. Top with crumble made from melted butter, brown sugar, cinnamon, and flour.
  8. Bake at 350°F (175°C) for about 20 minutes until golden brown.
