  • 450 g beef shank or 2 beef soup bones
  • 2 liters water
  • 1 bay leaf
  • 3 medium beets, peeled and grated
  • 1 large onion, finely chopped
  • 2 carrots, peeled and grated
  • 3 medium potatoes, peeled and cubed
  • 1 small cabbage, shredded
  • 3 cloves garlic, minced
  • 3 tablespoons sunflower oil or vegetable oil
  • 2 tablespoons tomato paste
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 tablespoons fresh dill, chopped

Instructions

  1. In a large pot, combine beef shank or bones with water and bay leaf; bring to boil over high heat. Reduce heat to low and simmer for 1.5 to 2 hours.
  2. Remove the meat once cooked; reserve broth.
  3. In a skillet, heat sunflower oil over medium heat. Add grated beets, vinegar, and sugar; sauté for about 5 minutes.
  4. Stir in tomato paste; cook for an additional 2 minutes before adding to the reserved broth.
  5. In the same skillet, sauté onions and carrots until softened (about 5–7 minutes) and add to the pot.
  6. Add cubed potatoes along with another bay leaf; simmer for about 10 minutes.
  7. Stir in shredded cabbage; continue cooking until potatoes and cabbage are tender (approximately 15 minutes).
  8. Shred cooled beef (discard bones) and return meat to the pot; add minced garlic along with salt and pepper to taste.
  9. Remove from heat; stir in fresh dill before serving hot with sour cream on top.
