  • 3 tbsp olive oil
  • 2 tbsp flour
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 parsnips, chopped
  • 3 potatoes, cubed
  • 3 cups beef broth
  • 1 cup apple vinegar
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper, to taste

Instructions

  1. Dredge the beef in flour, salt, and pepper.
  2. Heat olive oil in a Dutch oven over medium heat and brown the beef on all sides.
  3. Add onions, carrots, and parsnips; sauté until softened.
  4. Pour in the beef broth and apple vinegar; scrape up any browned bits from the pot.
  5. Stir in potatoes, bay leaves, thyme, salt, and pepper.
  6. Cover and let simmer on low heat for 1½ to 2 hours until the beef is tender.
  7. Remove bay leaves before serving.
