  • 4 boneless, skinless chicken breasts (about 1 ½ lbs total)
  • 1 pint cherry or grape tomatoes
  • 3 cloves garlic, minced
  • 8 oz feta cheese
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Salt & black pepper, to taste
  • Cooked rice, quinoa, or couscous, for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly oil a baking dish.
  2. Place the block of feta in the center of the dish and surround it with cherry tomatoes. Drizzle with 2 tablespoons olive oil and season with oregano, salt, and pepper.
  3. Season chicken breasts with salt and pepper, drizzle with remaining olive oil, and nestle them into the dish alongside the tomatoes and feta.
  4. Bake uncovered for 30–35 minutes until chicken reaches an internal temperature of 165°F (74°C) and tomatoes have burst.
  5. Remove from oven; mash the feta and tomatoes together using a fork to create a creamy sauce. Stir in minced garlic while hot.
  6. Slice or shred the chicken and serve over cooked grains. Top with sauce, garnish with fresh herbs, and add lemon wedges for brightness.
