  • 1 cup walnuts, finely chopped
  • ½ cup pistachios, finely chopped
  • ⅓ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp melted butter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, melted and slightly cooled
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 cup Greek yogurt (or sour cream)
  • 1 tsp vanilla extract
  • ½ cup honey
  • 2 tbsp water
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, combine walnuts, pistachios, brown sugar, cinnamon, nutmeg, and melted butter for the nut filling.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, mix melted butter, granulated sugar, eggs, Greek yogurt, and vanilla until smooth.
  4. Fold wet ingredients into dry ingredients until just combined.
  5. In each muffin cup, add a tablespoon of batter followed by some nut filling; top with more batter until filled to about ¾ full. Sprinkle remaining nut mixture on top.
  6. Bake for 18–22 minutes or until golden brown and a toothpick comes out clean.
  7. For honey syrup: Simmer honey with water and lemon juice for about 3–4 minutes; cool slightly before drizzling over warm muffins.
