  • 1 cup mashed ripe bananas (about 2)
  • 2½ cups all-purpose flour
  • 1 egg
  • ¼ cup sugar
  • 2¼ tsp instant yeast (1 packet)
  • ¼ cup warm milk
  • 3 tbsp melted butter
  • ½ tsp salt
  • For the filling: ¼ cup softened butter
  • ⅓ cup brown sugar
  • 1 tbsp cinnamon
  • For the glaze: ½ cup powdered sugar
  • 12 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. In a large mixing bowl, combine warm milk and instant yeast; let sit for 5 minutes until foamy.
  2. Add mashed bananas, egg, sugar, melted butter, and salt to the yeast mixture; mix until well combined.
  3. Gradually add flour while mixing until a soft dough forms. Knead on a floured surface for about 5 minutes.
  4. Place dough in a greased bowl, cover it, and let rise for about 1 hour or until doubled in size.
  5. Roll out the dough into a rectangle (12×18 inches) on a floured surface and spread softened butter over it.
  6. Sprinkle brown sugar and cinnamon evenly on top of the buttered surface before rolling it tightly into a log.
  7. Cut into 8–10 equal pieces and place them in a greased baking dish; let rise again for about 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake rolls for 20–25 minutes until golden brown.
  9. While baking, whisk together powdered sugar, milk, and vanilla extract to make the glaze; drizzle over warm rolls.
