Instructions

  1. In a large mixing bowl, combine 1 ½ cups rolled oats, 2 tablespoons ground flaxseed, 1 tablespoon chia seeds, 2 tablespoons maple syrup, ½ cup almond butter, 1 mashed ripe banana, 1 teaspoon pure vanilla extract, and ½ teaspoon ground cinnamon.
  2. Mix all ingredients thoroughly until well combined.
  3. Cover the mixture and chill in the refrigerator for 2–3 hours or overnight to thicken.
  4. Once firm, use slightly damp hands to shape the mixture into approximately 20 balls.
  5. Chill the shaped energy balls again for a few hours or overnight for optimal texture.
  6. Store in an airtight container in the refrigerator for up to 6 days or freeze for up to 3 months.
