  • 8 tablespoons unsalted butter
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch cake pan with parchment paper and butter.
  2. Arrange peach wedges in the cake pan, sprinkling cinnamon over them evenly.
  3. In a saucepan, combine 1/4 cup water and 1/2 cup sugar. Heat without stirring until light brown (10-15 minutes). Remove from heat, add fruit juice, and pour over peaches.
  4. In a mixer, beat together butter and sugar until fluffy. Add eggs one by one, mixing well after each addition along with vanilla extract.
  5. In another bowl, whisk together all-purpose flour, almond flour, baking powder, and remaining cinnamon. Gradually mix into wet ingredients until just combined.
  6. Pour batter over peaches in the pan and smooth the surface. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 15 minutes before inverting onto a serving dish.
