  • 8 ounces mascarpone cheese
  • 1 ¼ cup powdered sugar (sifted)
  • 1 ½ teaspoons vanilla extract
  • ¾ cup mini semi-sweet chocolate chips

Instructions

  1. In a medium mixing bowl, combine the ricotta and mascarpone cheeses. Blend using a hand mixer on medium-high speed until smooth and creamy.
  2. Gradually add the sifted powdered sugar and vanilla extract, mixing on low speed until fully combined.
  3. Gently fold in all but two tablespoons of the mini chocolate chips into the mixture.
