  • 1 medium head cauliflower, cut into florets (about 4 cups)
  • 3 cups vegetable broth (or chicken broth)
  • 1 cup whole milk (or half-and-half for creamier soup)
  • 2 cups sharp cheddar cheese, shredded
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 68 small round bread rolls (sourdough, French, or crusty bakery rolls)
  • Olive oil or melted butter, for brushing

Instructions

  1. Preheat the oven to 350°F (175°C). Hollow out the bread rolls and brush the insides with olive oil or melted butter. Bake for 10 minutes until crispy.
  2. In a large pot over medium heat, melt butter with olive oil. Sauté onion until softened, then add garlic and cook briefly. Add cauliflower and broth; bring to a boil, then reduce heat and simmer until tender.
  3. Blend the soup until smooth using an immersion blender. Stir in milk, spices, and cheddar cheese until melted and creamy. Season to taste.
