  • 2 lbs boneless beef shoulder, cut into large chunks
  • 1 tbsp olive oil
  • 1 large onion, cut into large pieces
  • 2 cloves garlic, minced
  • 2 cups apple cider
  • 1 tbsp dijon mustard
  • 2 lbs small red potatoes, halved
  • 1 tsp dried thyme
  • Salt and black pepper

Instructions

  1. Heat olive oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Season beef chunks with salt and pepper. Sear until golden brown on all sides; then set aside.
  2. In the same pot, add onion and cook for 3-4 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Pour in apple cider while scraping up browned bits from the pot; stir in dijon mustard and thyme.
  4. Return seared beef to the pot and arrange halved potatoes around it.
  5. Bring to a simmer, reduce heat to low, cover, and cook for 2-3 hours until beef is tender and easily shreds.
