  • 1 cup almond flour
  • 3 large egg whites
  • ¼ cup granulated sugar
  • ½ teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 4 oz cream cheese
  • ½ cup unsalted butter
  • Optional: milk for glaze

Instructions

  1. Prepare baking sheets lined with parchment paper. Sift together the almond flour, powdered sugar, and ground cinnamon.
  2. In a clean bowl, beat the egg whites and cream of tartar until foamy. Gradually add granulated sugar and whip until stiff peaks form.
  3. Gently fold the dry mixture into the whipped egg whites until the batter flows like 'lava.' Transfer to piping bags and pipe circles on the prepared sheets.
  4. Let the macaron shells rest for 30–40 minutes until they form a skin.
  5. Preheat oven to 300°F (150°C) and bake shells for 15–17 minutes. Cool completely before filling.
  6. For filling, beat softened cream cheese and butter until smooth; mix in powdered sugar, cinnamon, and vanilla until fluffy.
  7. Pair similar-sized macaron shells; pipe filling onto one shell and top with another shell.
