  • 4 boneless, skinless chicken breasts (≈2 lbs)
  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • ¼ cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Toasted sesame seeds
  • Chopped green onions
  • Vegetables: broccoli florets, bell peppers, snap peas

Instructions

  1. Place chicken in the crockpot in a single layer.
  2. In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger until combined.
  3. Pour sauce over chicken and lightly stir to coat all pieces evenly.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken is tender and shreds easily.
  5. Remove chicken from the crockpot and shred with two forks.
  6. In a small bowl, whisk cornstarch with water to create a slurry and stir this mixture into the sauce remaining in the crockpot.
  7. Cook on HIGH for an additional 10–15 minutes until glossy and thick.
  8. Return shredded chicken to the sauce in the crockpot and stir to coat evenly before serving with toasted sesame seeds and chopped green onions on top.
