  • 2 medium onions, thinly sliced
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 1 teaspoon sugar (optional, helps caramelize)
  • Salt and pepper, to taste
  • 2 tubes refrigerated crescent roll dough
  • 1 pound sliced deli roast beef (or leftover roast beef)
  • 12 slices provolone cheese
  • 1 egg, beaten (for egg wash)
  • 1 teaspoon sesame seeds (optional, for topping)
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 clove garlic, minced
  • ½ teaspoon onion powder

Instructions

  1. In a skillet over medium heat, melt butter and add thinly sliced onions, thyme, sugar (if using), salt, and pepper. Cook for 20–25 minutes until caramelized.
  2. Preheat the oven to 375°F (190°C) and line a 9×13-inch baking dish with parchment paper. Roll out one tube of crescent roll dough into the dish.
  3. Layer with half of the provolone cheese, followed by caramelized onions and roast beef. Top with remaining cheese and cover with the second tube of dough; seal edges.
  4. Brush with beaten egg and bake for 25–30 minutes until golden brown. Let cool for 10 minutes before slicing into squares.
  5. For au jus: simmer beef broth with Worcestershire sauce, soy sauce, minced garlic, and onion powder for 5–7 minutes.
