  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 (7-ounce) jar vegan marshmallow crème
  • 1 teaspoon vanilla extract
  • Orange food coloring
  • Black or Halloween-themed sprinkles
  • Melted white chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, cream softened butter, vegetable oil, brown sugar, and granulated sugar until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Alternate adding dry ingredients and buttermilk into the wet mixture until just combined.
  5. Drop rounded tablespoons of batter onto prepared baking sheets and bake for 10–12 minutes until set. Cool completely on a wire rack.
  6. For the filling, beat softened butter until creamy; gradually mix in powdered sugar and vegan marshmallow crème until fluffy. Tint with orange food coloring.
  7. Assemble whoopie pies by spreading filling between two cooled cookies.
