  • 1 cup grated carrots (about 2 medium)
  • ⅓ cup unsweetened applesauce
  • ¼ cup coconut oil (or olive oil), melted
  • ⅓ cup honey (or pure maple syrup)
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, mix grated carrots, applesauce, melted coconut oil, honey (or maple syrup), egg, and vanilla until well combined.
  4. Add dry ingredients to the wet mixture and stir until just combined. Fold in any optional add-ins if desired.
  5. Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet and flatten slightly.
