  • 1 ½ pounds boneless, skinless chicken breasts (pounded thin)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups panko breadcrumbs
  • ½ cup plain breadcrumbs
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • ½ cup vegetable oil (or enough for shallow frying)
  • 12 soft slider buns or dinner rolls
  • 1 cup shredded lettuce (or arugula for a peppery bite)
  • ½ red onion, thinly sliced
  • 12 slices dill pickles
  • 6 slices cheese (Swiss, provolone, or cheddar), cut in half
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 teaspoon fresh dill or parsley, chopped

Instructions

  1. Pound chicken breasts to ½-inch thickness and cut them into slider-sized pieces.
  2. Set up a dredging station: Bowl 1: Mix flour with salt and pepper. Bowl 2: Place beaten eggs. Bowl 3: Combine panko breadcrumbs, plain breadcrumbs, parsley, thyme, dill (if using), garlic powder, and paprika.
  3. Dredge each chicken piece in flour first, then dip it in egg before coating with the breadcrumb mixture.
  4. Heat vegetable oil in a skillet over medium-high heat.
  5. Fry each chicken piece for about 3–4 minutes on each side until golden brown and cooked through (the internal temperature should reach 165°F).
  6. Drain the fried chicken on paper towels to remove excess oil.
  7. In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, honey, and fresh herbs. Set aside.
  8. Lightly toast your slider buns for added texture.
  9. Spread sauce on the bottom halves of each bun.
  10. Layer with shredded lettuce followed by the schnitzel piece, cheese slice, red onion rings, and dill pickles.
  11. Top with the remaining bun halves.
