  • 1 jar pimentos (drained)
  • 1 block sharp cheddar cheese
  • ¼ tsp salt
  • 2 tbsp avocado
  • 1 tsp chopped tame jalapeños
  • ¼ cup pickle juice
  • ½ cup milk
  • ¼ cup tapioca starch
  • 3 tbsp avocado oil
  • 1 large egg
  • 1½ cups cauli crunch
  • 6 whole wheat buns
  • ⅓ cup pickled tame jalapeño slices
  • 2 tsp honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt

Instructions

  1. Slice chicken breasts in half lengthwise and marinate in pickle juice and milk for 15 minutes.
  2. Prepare pimento cheese by grating cheddar and mixing it with drained pimentos, salt, and jalapeños until creamy.
  3. Set up a dredging station with tapioca starch on one plate, whisked egg in another, and seasoned cauli crunch on a third.
  4. Coat each chicken piece in the dredging station before frying in avocado oil until golden brown.
  5. Toast the whole wheat buns under the broiler for 1-2 minutes.
  6. Assemble the sandwich: layer jalapeños, chicken, honey drizzle, and pimento cheese on the bun.
