  • 24 large white or cremini mushrooms (stems removed)
  • 1 tablespoon olive oil
  • 8 oz Italian chicken sausage (casings removed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, toss the mushroom caps with olive oil, salt, and pepper until well coated.
  3. In a skillet over medium heat, cook the Italian chicken sausage until browned. Add chopped onion and minced garlic; sauté until softened.
  4. Remove from heat and let it cool slightly before mixing in breadcrumbs, Parmesan cheese, parsley.
  5. Fill each mushroom cap with the sausage mixture using a spoon or small scoop. Place them on a baking sheet lined with parchment paper.
  6. Sprinkle additional Parmesan or shredded mozzarella on top of each stuffed mushroom. Bake for about 20 minutes until golden brown.
