  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup mascarpone cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups heavy cream, cold
  • ½ cup strong brewed espresso or coffee, cooled
  • Cocoa powder for dusting

Instructions

  1. Prepare the crust by combining graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of a springform pan and chill.
  2. In a mixing bowl, beat together cream cheese, mascarpone, powdered sugar, and vanilla until smooth. Whip heavy cream separately until stiff peaks form and gently fold into the cream cheese mixture.
  3. Layer half of the cheesecake filling over the chilled crust. Dip ladyfinger halves in cooled coffee and place over the filling. Spread remaining filling on top.
  4. Refrigerate for at least 6 hours or overnight to set.
  5. Before serving, dust with cocoa powder and add chocolate shavings if desired.
