  • 1 loaf bread (16 ounces, brioche or challah)
  • 1 cup canned pumpkin puree
  • 4 large eggs
  • 2 cups milk
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together pumpkin puree, eggs, milk, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.
  3. Place cubed bread into a greased 9×13 inch baking dish and pour the pumpkin mixture evenly over the bread.
  4. If desired, sprinkle nuts on top.
  5. Cover with foil and let it soak for about 20 minutes.
  6. Bake covered for 30 minutes; then uncover and bake for an additional 15 minutes until golden brown.
  7. Let cool for about 5 minutes before serving with maple syrup.
