Ingredients

  • Pumpkin puree
  • Fresh spinach
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • Vegetable broth
  • Garlic
  • Onion
  • Olive oil
  • Lasagna noodles

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cooking pot over medium heat, sauté diced onion and minced garlic in olive oil until softened. Add vegetable broth, salt, and black pepper; simmer for 5 minutes.
  3. In a mixing bowl, combine pumpkin puree, ricotta cheese, salt, and black pepper; mix until well blended.
  4. In your baking dish, start with a layer of sauce on the bottom. Place lasagna noodles over the sauce followed by half of the pumpkin filling and half of the spinach topped with mozzarella cheese. Repeat layers ending with noodles on top.
  5. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 15 minutes until golden brown.
  6. Allow to rest for 10 minutes before slicing and serving.
