  • 3 lbs beef chuck roast
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup dry red apple vinegar
  • 2 cups beef broth
  • 1 bay leaf
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • Fresh parsley for garnish

Instructions

  1. Season the beef chuck roast with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the roast until browned on all sides.
  3. Transfer the roast to the slow cooker and sauté onion and garlic in the same skillet until softened.
  4. Deglaze the skillet with red apple vinegar, scraping up browned bits, then pour over the roast.
  5. Add beef broth and bay leaf to the slow cooker, cover, and cook on low for 6-8 hours or high for 3-4 hours.
  6. During the last two hours (on low) or last hour (on high), add carrots and potatoes.
  7. Shred cooked meat before serving and garnish with fresh parsley.
