  • 1 large spaghetti squash
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the spaghetti squash and remove seeds. Brush cut sides with olive oil and place cut-side down on a baking sheet. Roast for about 40 minutes until tender.
  3. Once cooled, shred the squash into strands using a fork.
  4. In a skillet over medium heat, melt butter and sauté garlic until fragrant. Add heavy cream and stir continuously before gradually mixing in Parmesan cheese until smooth.
  5. Toss the shredded squash with Alfredo sauce, season with salt and pepper, and garnish with parsley before serving.
