  • 1/2 lb mezzi rigatoni
  • 2 tbsp extra virgin olive oil
  • 1/2 shallot, chopped
  • 1/2 lb turkey sausage
  • 4 garlic cloves, minced
  • 1/4 tsp salt
  • 1/4 tsp red chili flakes
  • 1/4 cup white apple vinegar
  • 2 tbsp tomato paste
  • 1/2 cup heavy cream
  • 1/3 cup Parmigiano Reggiano, finely grated

Instructions

  1. Cook the mezzi rigatoni in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, heat olive oil and sauté chopped shallots until softened (about 3-4 minutes). Add minced garlic and red chili flakes; cook for an additional minute.
  3. Add the turkey sausage to the skillet, breaking it apart as it cooks until browned (about 5-7 minutes).
  4. Pour in the white apple vinegar and let it reduce by half (about 3-5 minutes). Stir in tomato paste and cook for another 2 minutes.
  5. Lower the heat and add heavy cream; stir continuously until smooth. Mix in the grated Parmigiano cheese.
  6. Toss the cooked rigatoni into the skillet with sauce, adding reserved pasta water as needed to achieve your desired consistency.
  7. Serve hot with extra cheese if desired.
