Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages softened cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 cup caramel sauce
  • 1 cup semisweet chocolate chips, melted
  • 1 cup toasted pecans

Instructions

  1. Preheat oven to 325°F (160°C). Prepare the crust by combining graham cracker crumbs, sugar, and melted butter in a bowl. Press into a springform pan and bake for 10 minutes; let cool.
  2. For the filling, beat softened cream cheese until smooth. Add sugar and vanilla, mixing until combined. Incorporate eggs one at a time on low speed, then stir in sour cream.
  3. Pour filling over the cooled crust. Place the springform pan in a roasting pan filled with hot water halfway up the sides. Bake for 55–65 minutes until edges are set but center jiggles slightly.
  4. After baking, turn off the oven, crack the door open, and let the cheesecake sit for an hour before refrigerating overnight.
  5. Before serving, drizzle warm caramel and melted chocolate over the top and sprinkle with toasted pecans.
